A group of scientists from the Institute of Molecular and Cellular Biology of Plants (IBMCP) has identified a phenolic substance that synthesizes the tomato plant when it is subjected to a stress situation, and that constitutes a powerful natural antioxidant.
Researchers have explained that when a plant is subjected to a stress situation, it reacts by activating mechanisms that alter the levels of certain compounds, and that it is in this way that plants produce a large number of phenolic compounds. When studying this phenomenon they observed how the synthesis of this substance was produced, whose existence was unknown, and they verified that they could also synthesize it in the laboratory, by means of a low cost process and easy to carry out, which is a great advantage for its commercialization.
The antioxidant capacity of this compound is ten times higher than that of vitamin C and four and a half times more potent than that of vitamin E
Antioxidants have beneficial effects on health, such as preventing the development of cardiovascular diseases or cancer, so that the new compound could be used successfully in the pharmaceutical industry. In this regard, the specialists of the IBMCP have emphasized that the antioxidant capacity of this compound is significantly higher than that of other substances with similar characteristics (ten times more potent than vitamin C and four and a half times more potent than vitamin E).
The discovered compound could have numerous applications; in the food industry, for example, it could be used to preserve food, preventing alterations that affect the quality of food, or could be added to functional products.
Thanks to its antioxidant power, it could be used to produce cosmetic products indicated to care for the skin and delay skin aging. And it could also be used in certain industrial processes in order to prolong the useful life of the final product.
